Treatment process
The harvest of spinach takes place in Autumn and Spring and needs to be done very quickly in order to preserve the greatest fragrance and freshness of the product. After being harvested, the products are selected, cleaned and meticulously washed in water within a few hours; they are now ready to be treated. The spinach is minced in order to produce a purée which is later thermo-treated. This product is available in different cutting sizes (1-3 mm and 5-7mm).
